My aim is to create an email address that forwards on to an existing gmail address. I would then like to send emails using gmail from my domains address. This requires me to give the outgoing mail settings; including a password which I am unsure which one to use as I didn't have to create one when setting up the address.

Did you ever get an answer to this question? I manage to do the same thing with forwarding addresses here and then set gmail to accept an alias. I think that's what you want to do. Ask for details if you're still working on this.
