Subject: Reinstall server / change distribution

As some changes are sometimes difficult to rollback I was wondering if
it was possible to ask for a fresh install of the server with the choice
to have another distribution ? (go back to original state)
A way could be to delete the server and recreate it but is there a
better way to accomplish that ?

You must destroy and recreate your server.
