Hi,
How is the space under / (root) managed? Is it freely editable?
Yes with Gandi MI (Expert), No in with Gandi AI.
From what I can see from the documentation in the wiki, using the
Manual
Installation give you root access to the / root partition. This means
that you can edit, add and remove files everywhere.
....if you are root :)
Is the space of the root partition different from the space available
in
disk mounted on /srv? Is this space counted towards the disk quota?

/ -> System disk: Not counted in quota
/srv -> mounted disks, counted in quota
